Ingredients:
- 4 cups shredded coconut
- 1 cup sweetened condensed milk
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
- 2 egg whites
- 1/2 cup granulated sugar
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a large bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and salt
Mix well until the mixture is evenly combined
In a separate bowl, using an electric mixer, beat the egg whites until soft peaks form
Gradually add the granulated sugar to the egg whites while continuing to beat, until glossy stiff peaks form
Gently fold the beaten egg whites into the coconut mixture until everything is well mixed
Using a spoon or a cookie scoop, drop rounded tablespoons of the mixture onto the prepared baking sheet, spacing them about 1 inch apart
Bake in the preheated oven for about 12-15 minutes, or until the tops and edges of the macaroons are golden brown
Remove from the oven and let the macaroons cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
Once cooled, you can drizzle melted chocolate over the macaroons, if desired
