Ingredients:
- 2 cups gluten-free flour
- 1 cup peanuts, finely chopped
- 1/2 cup coconut sugar
- 1/4 cup coconut oil, melted
- 1/4 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 tablespoon sesame seeds optional, for garnish
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a large mixing bowl, combine the gluten-free flour, chopped peanuts, coconut sugar, melted coconut oil, applesauce, vanilla extract, baking powder, and salt
Mix well until a dough forms
Using your hands, roll the dough into small balls and place them on the prepared baking sheet
Press each ball down gently with a fork to flatten it slightly
If desired, sprinkle sesame seeds on top of each cookie for garnish
Bake in the preheated oven for 12-15 minutes, or until the cookies are golden brown around the edges
Remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely
Once cooled, store the cookies in an airtight container at room temperature for up to one week
