Ingredients:
- 1 sheet of puff pastry, thawed
- 2 tablespoons olive oil
- 2 red onions, thinly sliced
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 ounces feta cheese, crumbled
- 1 tablespoon chopped fresh thyme leaves
- 1 egg, beaten for egg wash
Instructions:
Preheat the oven to 400F 200C
Roll out the puff pastry on a lightly floured surface and cut into squares or circles depending on preference
Place the pastry squares/circles onto a baking sheet lined with parchment paper
In a skillet, heat the olive oil over medium heat
Add the sliced red onions and cook until softened, about 8-10 minutes
Sprinkle the sugar over the onions and continue cooking until caramelized, about 5 minutes
Season the onions with salt and black pepper, then remove from heat and let cool slightly
Divide the caramelized onions among the pastry squares/circles, leaving a border around the edges
Top each tart with crumbled feta cheese and chopped thyme leaves
Brush the edges of the pastry with beaten egg to create a golden crust
Bake in the preheated oven for 15-20 minutes, or until the pastry is puffed and golden brown
Serve warm or at room temperature, optionally garnished with additional thyme leaves
