Vegan Lentil Soup

This vegan lentil soup is hearty, flavorful, and packed with protein and fiber. Its a comforting and nutritious dish perfect for chilly days or anytime you need a nourishing meal.

Ingredients:

  • 1 cup red lentils
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 can 14 oz diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions:

Heat olive oil in a large pot over medium heat

Add onion, carrots, celery, and garlic

Cook until softened, about 5 minutes

Stir in cumin, paprika, turmeric, salt, and pepper

Add lentils, diced tomatoes, and vegetable broth

Bring to a boil

Reduce heat and simmer for 20-25 minutes until lentils are tender

Adjust seasoning if needed

Serve hot, optionally garnished with fresh herbs or a squeeze of lemon juice
