Ingredients:
- 1 cup raw cashews
- 1/4 cup cocoa powder
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup coconut milk
Instructions:
Let the cashews soak in water for at least four hours, or even overnight
Drain and rinse the cashews well
Soaked cashews, cocoa powder, maple syrup, vanilla extract, salt, and coconut milk should all be put into a blender
To make it smooth and creamy, scrape down the sides of the bowl as needed
Move the mixture to a saucepan
Heat it over medium-low heat while stirring it all the time for about 5 to 7 minutes, or until it gets thicker
Take it off the heat and let it cool down a bit
Spoon pudding into serving bowls
Cover and chill in the fridge for about two hours, or until it sets
If you want, you can serve it cold and top it with fresh fruit or chopped nuts
