This Keto Mississippi Pot Roast is a savory and satisfying meal thats perfect for a low-carb diet. The chuck roast becomes incredibly tender as it cooks low and slow in a flavorful broth with butter, ranch seasoning, and tangy pepperoncini peppers.
Ingredients:
- 3 lbs chuck roast
- 1/2 cup beef broth
- 1/4 cup unsalted butter
- 8 pepperoncini peppers
- 2 tbsp ranch seasoning mix
- 1 tbsp garlic powder
- Salt and pepper to taste
Instructions:
Season chuck roast with garlic powder, salt, and pepper
Place seasoned chuck roast in a slow cooker
Add beef broth, butter, ranch seasoning mix, and pepperoncini peppers on top of the roast
Cover and cook on low for 8 hours or until the meat is tender and easily falls apart
Once cooked, shred the meat using two forks and mix it with the juices in the slow cooker
