Instead of regular toast, try this gluten-free Almond Joy Sweet Potato Toast. It tastes great and is good for you. On top are crunchy cacao nibs, creamy coconut butter, almonds, and you can add shredded coconut and maple syrup if you want. This is a delicious gluten-free take on the classic Almond Joy flavor.
Ingredients:
- 1 sweet potato, sliced into 1/4-inch thick rounds
- 2 tablespoons coconut butter
- 1/4 cup sliced almonds
- 2 tablespoons cacao nibs
- 2 tablespoons shredded coconut optional
- 1 tablespoon maple syrup optional, for drizzling
Instructions:
Set your toaster or toaster oven to medium-high heat
For about 5 to 7 minutes on each side, toast the sweet potato rounds in a toaster or toaster oven until they are cooked all the way through and a little crispy
Warm up the sweet potato rounds and then cover each one with a lot of coconut butter while they are still hot
If you want, you can top the sweet potato rounds covered in coconut butter with sliced almonds, cacao nibs, and shredded coconut
