A quick and easy chicken curry that tastes great and can be made in a pressure cooker. Your taste buds will be happy when you mix the fragrant spices with the soft chicken.
Ingredients:
- 1 lb chicken, cut into bite-sized pieces
- 1 cup diced onions
- 1 cup diced tomatoes
- 1/2 cup yogurt
- 2 tablespoons vegetable oil
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
Set the pressure cooker to saut mode and heat vegetable oil
Add diced onions and saut until golden brown
Stir in ginger-garlic paste until fragrant
Add chicken pieces and brown on all sides
Mix in cumin powder, coriander powder, turmeric powder, and red chili powder
Pour in diced tomatoes and cook until they soften
Turn off saut mode, add yogurt, and mix well
Season with salt and pepper to taste
Close the pressure cooker lid and set it to high pressure for 8 minutes
Once done, release pressure naturally for 5 minutes, then quick release
Garnish with fresh cilantro and serve hot with rice or naan
