This Roasted Beet and Goat Cheese Salad is a delightful combination of earthy beets, creamy goat cheese, and crunchy walnuts. The balsamic-honey dressing adds a touch of sweetness and tanginess to make it a perfect winter and fall salad.
Ingredients:
- 3 medium-sized beets, peeled and sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 cups mixed greens
- 1/2 cup crumbled goat cheese
- 1/4 cup chopped walnuts
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 1/4 cup extra virgin olive oil
Instructions:
Turn on the oven and heat it up to 400F 200C
Spread the sliced beets out on a baking sheet and season them with salt and pepper
For 25 to 30 minutes, or until they are soft and slightly caramelized, roast the beets
To make the dressing, mix balsamic vinegar, honey, and extra virgin olive oil in a small bowl with a whisk while the beets roast
Put away
Let the beets cool down a bit after theyre done
Mix the mixed greens, roasted beets, crumbled goat cheese, and chopped walnuts together in a large salad bowl
Pour the dressing over the salad and gently toss it all together
Serve right away and enjoy
