Ingredients:
- 6 large poblano peppers
- 1 lb shrimp, peeled and deveined
- 2 tbsp Cajun seasoning
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
Instructions:
Warm the oven up to 190C 375F
Peel and cut poblano peppers in half lengthwise
Then, take out the seeds and membranes
Spread Cajun seasoning out in a bowl and toss shrimp in it
In a skillet over medium heat, heat the olive oil
Add the onion and garlic, and cook them until they are soft
Put the shrimp in the pan with the seasonings
Cook for about 34 minutes, until the shrimp is pink and opaque
Add the chopped cilantro and diced tomatoes and stir them in
Cook for two more minutes
Add pepper and salt to taste
Put some of the shrimp mixture into each half of the poblano, and then cover the tops with cheese shreds
Put the stuffed peppers on a baking sheet and bake them for 15 to 20 minutes, or until the cheese melts and starts to bubble
Enjoy while hot
